Capitol Hill’s global cafe flavors expand with ‘Chinese-inspired’ Offline Coffee
The tile of a Bellevue Ave cafe space is shining again. Offline Coffee is ready to roll out spring and summer flavors after a winter opening on the northwest edge of the Hill. Its flavors add to an increasingly international mix of espresso and cafe love on Capitol Hill.
CHS reported in September on plans for the “Chinese-inspired coffee + matcha cafe and light eatery” from first time food and drink entrepreneurs Krystal Graylin and Lucy Kong.
Offline has brought new energy to the former Finch & Pine cafe space after it shuttered in July.
The cafe has a storied history. It was with the redevelopment of the Belroy Apartments more than a dozen years ago and has hosted projects over the years from an intriguing list of Capitol Hill-related owners including Fuel Coffee founder Dani Cone, Team Maranation’s Kamala Saxton and Roz Edison, and Joe Bar’s Wylie Bush.
Graylin and Kong are newbies to the city’s food and drink circles. The former tech workers turned to Seattle tech industry chronicler Geekwire to tell the story of their new coffee shop — “a deliberate departure from the corporate world both founders left behind.”
“AI is good for automating things that are really tedious and unpleasant,” Graylin told Geekwire. “But social interactions — those are things that don’t need to be sped up.”
In the interview, the two budding coffee entrepreneurs said Offline’s floral syrups and.flavor combinations have been inspired by their trips to China.
The cafe menu at Offline includes signature creations like the Yuzu Maple Montblanc, the Orange Osmanthus Latte, and the Yezi Latte with espresso poured over Chinese coconut milk.
Offline Coffee isn’t alone in bringing new elements to the Capitol Hill coffee scene. In February, CHS reported on the opening of Nudibranch Coffee, said to be the city’s first Thai coffee shop, at 12th and Madison. 2025 brought Phê and its Vietnamese coffee ambitions in a new auto row-inspired cafe on E Pine. Other 2025 openings included the Palestinian heritage and community of Mintish Coffee House on Harvard Ave and “Persian daytime cafe” Open Form also on E Pike. Meanwhile, E Pike is also lined up with plans for a location of Haraz Coffee House, a national Yemeni coffee chain.
With new flavors, Offline Coffee has brought 8 AM to 4 PM service to Bellevue Ave with plenty of room for conversation — or laptops.
